As the new head chef at The Fold I have been asked to introduce myself and tell y'all a little bit about me. I was born in Scotland but raised in the American south so i guess you could say I'm half Scottish and mostly American. My wife and I moved from Bristol to Malvern nearly a year ago, and are loving Worcestershire life!
I've come to The Fold via a stint at The Inn at Welland, where we were awarded a Bib Gourmand in the most recent Michelin Guide. My true passion in food, however, is centred around soil; that the very best flavour in produce comes as a result of good soil stewardship. So for me the move to The Fold is a dream come true - a chance to be part of planning creative cuisine from seed to plate.
